this dinner was a first in more ways than one. ever heard of (or had) broccoli rabe? me either. how about chickpeas? yes i’ve had them, no i didn’t know they were garbanzo beans (oops) and what about broiling these leafy greens to make a warm salad topped with garlic, ricotta, lemon juice and red pepper flakes, all in under 5 minutes cooking time? (seriously, real simple you better add this to your list of easy weeknight dinners. boiling water for pasta takes longer). it was the perfect amount of crunch, salt, spice, cheese and zest with literally zero effort. and how cute is that little baby broccoli peaking through!? i will be eating you again crispy rabe. the first picture shows all you’ll need to get started. (tip: i made this for one so used 1/2 a bunch of broccoli rabe, only one baking sheet, eyeballed the olive oil & topped it with a spoonful of ricotta).
